Pancakes
Good any time, sweet, stuffed with fruit or sprinkled sugar and lemon juice. You can also serve this as a savoury dish - just saute a little bacon or mushrooms in the pan before you add the batter so that the bacon/mushrooms become embedded in the pancake. Delicious!
60g Plain Flour
2 Eggs
A pinch of salt
300ml Milk
In a jug, beat the eggs into the milk thoroughly and add the salt. Mix well. Put the flour in a bowl and add the milk/egg mixture. Beat the batter thoroughly with a whisk to get rid of any lumps. Heat a little oil in an omelette pan until it starts to smoke. Pour enough batter into the pan to cover the bottom and cook on a high heat until the top of the pancake is almost solidified. Carefully turn the pancake over and cook the bottom until browned in patches.
