Colcannon

Traditional Irish Recipe 

You will need:

3lb potato peeled

2lb cale/green/savoy cabbage

2 cups leek or green onion minced

3/4pint soy milk or non diary milk or cows milk

salt and pepper

 

Place potatoes into pan of boiling water until soft.

chop and steam cabbage for 5 minutes or until tender

cool and gently squeeze out water.  In a lightly oiled skillet

steam fry the leeks until softened

drain and mash spuds

beet in milk, then add cabbage and leeks

add salt and pepper to taste

serve hot with stew or gravy
